How to Make Authentic Muradabadi Biryani

Step 1: Marinate the Chicken

In a bowl, mix chicken with yogurt, ginger-garlic paste, turmeric, red chili powder, salt, green chilies, and lemon juice. To allow flavors to seep in, let it marinade for at least half an hour.

Step 2: Cook the Chicken

Heat ghee or oil in a pot. Add sliced onions and sauté until soft (not deeply browned). After adding the marinated chicken, sauté it over medium heat until it is cooked through and tender.. The gravy should be light, not thick.

Step 3: Prepare the Rice

Boil water with bay leaf, cloves, cinnamon, peppercorns, and salt. Add soaked basmati rice and cook until 70% done. Drain the rice.

Step 4: Layer the Biryani

Spread half the rice over the cooked chicken. Sprinkle coriander and mint. Add the remaining rice on top. Cover with a tight lid.

Step 5: Dum Cooking

Cook on low heat for 10–15 minutes to let flavors blend. This slow steam cooking (dum) gives Muradabadi Biryani its signature aroma.
