Ingredients:
- 2 tomatoes (large size)
- 10-12 cashews
- 1/2 cup curd (fresh and full cream)
- 1 tsp ginger paste
- 2 tbsp oil or ghee
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin seeds
- 1/2 tsp garam masala
- 1/2 tsp red chili powder (or as per taste)
- 1/2 tsp kasuri methi (crushed)
- Salt as per taste
- 1/2 cup water (for the consistency of gravy)

Method: Navratri special gravy
- First of all, put tomatoes and cashews in a mixer and make a smooth paste. If you want, you can add some water to it and blend it well.
- After this, heat oil or ghee in a pan and then add cumin seeds and fry lightly.
- Now add ginger paste and fry for 30 seconds and then add tomato-cashew paste and cook on low flame for 5-7 minutes.
- Now add turmeric, coriander powder, red chili powder, and salt to it.
- After this, mix it well and keep frying until the oil starts separating from the sides.
- Now add whipped curd to it and cook while stirring continuously, so that the curd does not curdle.
- When the gravy thickens, add garam masala and kasuri methi to it.
- Cook for another 1-2 minutes and if needed, add some water to bring it to the right consistency.
- Prepare your favorite dish by adding paneer, potatoes, mixed veg, soya chunks or koftas to this gravy.
- Serve it with naan, paratha, or jeera rice and get restaurant-like taste at home.
