Ingredients :

  1. Boiled potatoes: 4-5
  2. Tomatoes: 2 (finely chopped or pureed)
  3. Green chilies: 2 (finely chopped)
  4. Ginger: 1 inch (grated)
  5. Cumin: 1 tsp.
  6. Asparagus: half a teaspoon
  7. Turmeric powder: half a teaspoon
  8. Red chili powder: 1 tsp.
  9. Coriander powder: 1 tsp.
  10. Garam masala: ½ tsp.
  11. Kasuri Methi: 1 tsp (to taste)
  12. Oil or Ghee: 2 Tbsp.
  13. Salt: to taste
  14. Green coriander: For garnishing

Quick & Delicious Potato with Asparagus Recipe: Method

  1. First, peel and cut the boiled potatoes into medium-sized pieces.
  2. After that, heat oil or ghee in a pan. When the oil is hot, add the cumin and asparagus.
  3. As soon as the asparagus smells, add the green chillies and grated ginger and sauté lightly.
  4. Now add chopped tomatoes or tomato puree. Cook the tomatoes until they soften and the oils begin to separate.
  5. Next, add turmeric, red chili, and coriander powder to it and mix well.
  6. Then fry the spices on low heat for 1-2 minutes to remove the rawness.
  7. Now add the chopped potatoes and mix well with the spices. Add salt and fry for 2-3 minutes so that the flavor of the spices settles well in the potatoes.
  8. If you like vegetables with gravy, add a little water to it and bring it to a boil. If cooking dry vegetables, do not add water.
  9. Add garam masala and kasuri methi and mix well. Turn off the gas after cooking for 1-2 minutes.
  10. Garnish with finely chopped green coriander on top.
  11. Potatoes with asparagus look very tasty with paranthas, puri, roti, or rice.
