Ingredients: Restaurant-style Fried Rice

  1. Mixed vegetables (finely chopped): 1.5 cups (carrots, beans, cabbage, capsicum, spring onion whites)
  2. Cooked rice: 2 cups
  3. Ginger-garlic paste: 1 tsp
  4. Soya sauce: 1.5 – 2 tsp
  5. Chili sauce: 1 tsp
  6. Vinegar: 1/2 tsp
  7. Black pepper powder: 1/2 tsp
  8. Salt: to taste
  9. Oil: 2-3 tsp
  10. Green part of spring onion: 2 tbsp

Method:

  1. First of all, make sure that your rice is cooked and cooled. If you use hot rice, it can become sticky. Leftover rice is best.
  2. Heat a large wok on a high flame. Oil should be added, and the flame should be slightly extinguished once the oil has heated up and begun to smoke.
  3. Now add ginger-garlic paste (or finely chopped ginger-garlic) and fry for a few seconds, until the raw smell goes away.
  4. Add the chopped spring onion whites, beans, and carrots right away.
  5. Fry on high flame for 2-3 minutes while stirring continuously. We do not have to cook the vegetables much; they should remain slightly crispy.
  6. Now add capsicum and cabbage and fry for 1-2 minutes more.
  7. Now add the vinegar, black pepper powder, soy sauce, chilli sauce, and salt (keep in mind that soy sauce also includes salt) and stir thoroughly.
  8. Add the cooked cold rice right away and stir gently to ensure the rice does not break and the sauce and vegetables are well combined
  9. Cook on high flame for 2-3 minutes while stirring continuously. This will give a restaurant-like ‘smoky flavour’ to the rice.
