Ingredients: Easy Mix Veg Poha Recipe
- 2 cups poha
- 1 medium-sized onion, finely chopped
- 1 small carrot, finely chopped
- 1/2 cup green peas (fresh or frozen)
- 1 small potato, chopped into small pieces
- 1 green chili, finely chopped
- 8-10 curry leaves
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/2 tsp coriander powder
- 1/4 tsp red chili powder
- 1 tsp sugar
- 2 tbsp oil
- Salt to taste
- 1 tbsp lemon juice
- Fresh coriander leaves, finely chopped (for garnishing)
Method:
- Meanwhile, rinse the poha gently using a large sieve to avoid breaking it.
- Remember that the poha should not get very soft, so wash it right away and remove it.
- Avoid submerging it in water for an extended period.
- To make the poha softer, soak it for five to seven minutes if it is thick.
- Now, mix the washed poha with turmeric and salt, ensuring an even coating, and keep it aside.
- Warm some oil in a pan and sprinkle in the mustard seeds, allowing them to crackle.
- Add curry leaves and green chilies and cook until the mustard seeds begin to crackle.
- Add finely chopped onions to the pan and sauté until they turn golden brown.
- Then add potatoes, carrots, and peas, and cook on medium heat for 4-5 minutes.
- You can also include other veggies, beans, or capsicum if you would like.
- When the vegetables become soft, add coriander powder, red chili powder, and sugar and mix.
- Now add the prepared poha and fry lightly on a low flame for 2-3 minutes.
- Mix everything well so that the spices and vegetables get absorbed in the poha.
- After this, turn off the gas and add lemon juice and fresh coriander leaves.
- Serve the mixed veg poha hot. You can add coriander leaves as a garnish.
- Eat it for breakfast with tea, coffee, or milk.
