Make Dhaba-Style Dal Tadka at Home: Ingredients

For dal

  1. Arhar dal half cup
  2. Gram dal 2 tablespoons
  3. Water as per requirement
  4. Hing half a teaspoon
  5. Salt according to taste

For tempering

  1. Oil or ghee 3 tablespoons
  2. Cumin seeds, one teaspoon
  3. Asafoetida 1/4 teaspoon
  4. Bay leaf one
  5. Cinnamon piece one inch
  6. Ginger-garlic paste
  7. Onion finely chopped
  8. Tomatoes finely chopped
  9. Green chillies, finely chopped
  10. Haldi powder, half a teaspoon
  11. Red chilli powder, one teaspoon
  12. Coriander powder, one teaspoon
  13. Garam masala, half a teaspoon
  14. Kasuri methi, half a tablespoon
  15. Green coriander

For tempering while serving

  1. Ghee two tablespoons
  2. Cumin seeds, half a teaspoon
  3. Dry red chilli
  4. Garlic finely chopped
  5. Asafoetida one pinch
  6. Kashmiri red chilli powder, half a teaspoon

Method:

  1. First of all, wash arhar dal and gram dal and put them in a pressure cooker.
  2. Now add water, turmeric powder, salt as per taste, and one teaspoon oil or ghee, and mix.
  3. Close the lid of the pressure cooker and let it cook till 3 to 4 whistles.
  4. In a pan, heat two teaspoons of oil or ghee.
  5. Heat ghee in a pan and add dry red chilies along with cumin seeds. Let them splutter.
  6. After this, add ginger-garlic paste and green chillies and fry for a minute.
  7. Next, add finely chopped onions and sauté until they become golden brown.
  8. After this, add finely chopped tomatoes and cook till they become soft.
  9. Now add turmeric powder, red chilli powder, coriander powder, and garam masala and mix well.
  10. Now put the boiled lentils in the pan.
  11. Now let it boil for five minutes.
  12. Now add kasuri methi and finely chopped coriander and mix. Turn off the gas.
  13. After this, heat two tablespoons of ghee in a small pan.
  14. Heat ghee in a pan, then add cumin seeds and dry red chillies, allowing them to splutter
  15. Now add finely chopped garlic and fry till it turns golden.
  16. Turn off the gas and immediately add a pinch of asafoetida and Kashmiri red chili powder and mix.
  17. Immediately pour this prepared tempering over the dal.
  18. Now serve it with rice.
