- Maida- 2 cups
- Semolina- 2 tablespoons
- Salt- 1/2 teaspoon
- Celery- 1/2 teaspoon
- Oil- 2 tablespoons (for kneading)
- Water- for kneading
- Boiled potatoes- 3 to 4 (medium size, mashed)
- Ginger- 1 teaspoon (grated)
- Green chilli- 1 finely chopped
- Coriander powder- 1 teaspoon
- Fennel- 1 teaspoon
- Red chilli powder- 1/2 teaspoon
- Dry mango powder- 1/2 teaspoon
- Garam masala- 1/4 teaspoon
- Salt- according to taste
- Green coriander- a little finely chopped

Method:
- Put maida, semolina, salt, and celery on a plate.
- Add 2 tablespoons of oil to it and mix it well with your hands.
- Now, gradually add water while kneading the dough until it is smooth and hard.
- Keep it aside for 20 minutes.
- Now heat 1 tablespoon of oil in a pan.
- Add fennel, ginger, and green chillies and fry lightly.
- Next, add the mashed potatoes along with the green coriander, garam masala, dry mango powder, red chilli, and coriander powder.
- Mix well and fry for 4 to 5 minutes, and let it cool.
- After this, make small balls of dough.
- Roll a ball (roll thick and small), keep some stuffing in the middle, close the edges, and make a ball.
- After that, gently roll it into a kachori shape. Do not make it too thin.
- Now, heat oil in a pan. Keep in mind that the oil is not too hot.
- Now add kachoris one by one and fry on a low flame till they become golden on both sides.
- Serve hot Aloo Kachori with curd and potato curry, green coriander-mint chutney, or sweet chutney.
- You can also eat it with tea.
