Ingredients: Crispy Market-Style Aloo Kachori Recipe

 

  1. Maida- 2 cups
  2. Semolina- 2 tablespoons
  3. Salt- 1/2 teaspoon
  4. Celery- 1/2 teaspoon
  5. Oil- 2 tablespoons (for kneading)
  6. Water- for kneading
  7. Boiled potatoes- 3 to 4 (medium size, mashed)
  8. Ginger- 1 teaspoon (grated)
  9. Green chilli- 1 finely chopped
  10. Coriander powder- 1 teaspoon
  11. Fennel- 1 teaspoon
  12. Red chilli powder- 1/2 teaspoon
  13. Dry mango powder- 1/2 teaspoon
  14. Garam masala- 1/4 teaspoon
  15. Salt- according to taste
  16. Green coriander- a little finely chopped
  17. Oil

Method:

  1. Put maida, semolina, salt, and celery on a plate.
  2. Add 2 tablespoons of oil to it and mix it well with your hands.
  3. Now, gradually add water while kneading the dough until it is smooth and hard.
  4. Keep it aside for 20 minutes.
  5. Now heat 1 tablespoon of oil in a pan.
  6. Add fennel, ginger, and green chillies and fry lightly.
  7. Next, add the mashed potatoes along with the green coriander, garam masala, dry mango powder, red chilli, and coriander powder.
  8. Mix well and fry for 4 to 5 minutes, and let it cool.
  9. After this, make small balls of dough.
  10. Roll a ball (roll thick and small), keep some stuffing in the middle, close the edges, and make a ball.
  11. After that, gently roll it into a kachori shape. Do not make it too thin.
  12. Now, heat oil in a pan. Keep in mind that the oil is not too hot.
  13. Now add kachoris one by one and fry on a low flame till they become golden on both sides.
  14. Serve hot Aloo Kachori with curd and potato curry, green coriander-mint chutney, or sweet chutney.
  15. You can also eat it with tea.
