Raw Mango Chutney: Ingredients

  1. Raw mango: 2 medium-sized (peel and cut into small pieces)
  2. Onion: 1 small (finely chopped, optional)
  3. Garlic cloves: 2-3 (optional, finely chopped)
  4. Green chillies: 1-2 (finely chopped, as per taste)
  5. Two to three tablespoons of jaggery or sugar (modify according to sourness and flavor).
  6. Cumin seeds: 1 tsp
  7. Fennel seeds: ½ tsp
  8. Nigella seeds (mangrael): ½ tsp
  9. Red chilli powder: ½ tsp (for colour and spiciness)
  10. Turmeric powder: ¼ tsp
  11. Mustard oil: 1 tbsp
  12. Salt: as per taste
  13. Water: ¼ cup (as per requirement)
  14. Coriander leaves: 2 tbsp (finely chopped, for garnish)

Method:

  1. Firstly, wash and peel the mango thoroughly and cut it into small pieces. If you want, you can also grate it; this will make the chutney faster.
  2. Heat mustard oil in a wok or pan. Add the cumin, fennel, and nigella seeds to the heated oil and allow them to crackle.
  3. If you are using onion and garlic, then at the same time, add finely chopped onion and garlic and fry till light pink.
  4. Now add chopped green chilies, turmeric powder, and red chili powder and fry for a few seconds. Add the diced mango pieces right away and stir thoroughly.
  5. Mix thoroughly after adding the salt and ¼ cup of water. Cover and cook on a low flame for 5-7 minutes, till the mango pieces become slightly soft. Keep in mind, do not melt the mango too much.
  6. When the mango becomes a little soft, add jaggery or sugar to it and mix well. Cook till the jaggery melts and the chutney thickens. Adjust the sourness and sweetness according to your taste.
