🍄 Mushroom Biryani Recipe: Ingredients

For Rice

  1. 2 cups basmati rice (soaked for 30 minutes)
  2. 4 cups water
  3. 2 bay leaves
  4. 4 green cardamom pods
  5. 4 cloves
  6. 1 cinnamon stick
  7. Salt to taste

For Mushroom Masala

  1. 250 g button mushrooms (cleaned and sliced)
  2. 2 tbsp oil + 1 tbsp ghee
  3. 1 tsp cumin seeds
  4. 2 onions (thinly sliced)
  5. 1 tbsp ginger-garlic paste
  6. 2 green chilies (slit)
  7. 2 tomatoes (finely chopped)
  8. ½ cup thick yogurt
  9. 1 tsp red chili powder
  10. 1 tsp coriander powder
  11. ½ tsp turmeric powder
  12. 1 tsp garam masala
  13. 1 tsp biryani masala
  14. Salt to taste

For Aroma & Garnish

  1. ½ cup fresh mint leaves
  2. ½ cup coriander leaves
  3. Saffron soaked in warm milk (optional)
  4. Fried onions (optional)

Cook the Rice

Heat the water with salt and entire spices until it boils. Add soaked rice and cook until 70% done. Drain and set aside.

Prepare Mushroom Masala

Heat oil and ghee in a heavy-bottom pan. Add cumin seeds, then onions. Sauté until golden brown.
Add ginger-garlic paste and green chilies. Cook until aromatic.

Add Mushrooms & Spices

Add mushrooms and sauté on medium heat until the moisture evaporates.
Mix in tomatoes, yogurt, turmeric, chili powder, coriander powder, biryani masala, and garam masala. Cook until the oil separates.

Layer the Biryani

Lower the flame. Add chopped mint and coriander.
Layer cooked rice over the masala. Drizzle saffron milk and ghee on top.

Dum Cooking

Cook for 15 to 20 minutes over low heat with a tight lid.
