Ingredients: How to cook karela without bitterness
- 4-5 medium-sized bitter gourds
- 2 tbsp oil
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- 1 cup gram flour (besan)
- 1 tsp cumin seeds
- 1/2 tsp asafoetida
- 1 tsp celery seeds
- 1 tsp fennel seeds
- 1 tsp dry mango powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 2 tbsp oil
- Salt to taste
- Green coriander (finely chopped)

Method:
- First of all, wash the bitter gourd thoroughly and dry it. Then cut and remove both ends of the bitter gourd.
- Now, cut the bitter gourd lengthwise from the middle and remove its pulp and seeds with the help of a spoon.
- Apply salt inside and outside the bitter gourd and keep it for 15-20 minutes. This will reduce its bitterness.
- After this, wash the bitter gourd with water and dry it.
- Now heat oil in a pan and fry cumin seeds, asafoetida, celery, and fennel seeds in it. Now add gram flour and fry it on a medium flame, stirring continuously to prevent burning.
- When the gram flour starts giving off an aroma and its color becomes a light golden hue, turn off the gas.
- Now, prepare the stuffing by mixing red chili powder, coriander powder, dry mango powder, garam masala, salt, and green coriander in it.
- Now fill the prepared stuffing inside the bitter gourd. Keep in mind that the stuffing should not be too tight, otherwise the bitter gourd may burst while cooking.
- After filling the stuffing, tie the bitter gourd with the help of a thread or toothpick, so that the stuffing does not come out.
- Now heat oil in a pan and fry the bitter gourd in it on a low flame till it becomes golden.
- Keep turning the bitter gourd well, so that it gets cooked evenly.
- When the bitter gourd becomes soft and is well roasted, turn off the gas.
- Serve hot stuffed bitter gourd with dal-rice.
