🍗 Chicken Biryani Recipe: Ingredients
For Marination
- 1 kg chicken (bone-in preferred)
- 1 cup thick yogurt
- 2 tbsp ginger-garlic paste
- 2 tsp red chili powder
- 1 tsp turmeric powder
- 2 tsp biryani masala
- 1 tsp garam masala
- Juice of 1 lemon
- Salt to taste
- Handful of chopped mint leaves
- Handful of chopped coriander leaves
For Rice
- 3 cups basmati rice (soaked 30 minutes)
- 5–6 cups water
- 2 bay leaves
- 4 green cardamoms
- 1 cinnamon stick
- 5 cloves
- Salt to taste
For Biryani Layering
- 3 large onions (thinly sliced & fried golden)
- ¼ cup warm milk
- Few strands of saffron (or 1 tsp rose water)
- 3 tbsp ghee
- 2 tbsp oil
How to Make Perfect Chicken Biryani: Method
Step 1: Marinate the Chicken
Mix chicken with yogurt, spices, lemon juice, mint, coriander, and salt. For at least two hours (overnight for optimal taste), cover and marinate.
Step 2: Cook the Rice
Boil water with whole spices and salt. Add soaked rice and cook until 70% done. Drain and set aside.
Step 3: Cook the Chicken
Heat oil and ghee in a heavy-bottom pan. Add marinated chicken and cook on medium flame for 8–10 minutes until partially cooked and aromatic.
Step 4: Layer the Biryani
Lower the flame. Add half the rice over chicken, sprinkle fried onions, saffron milk, mint, and coriander. Add the remaining rice and repeat layering.

Step 5: Dum Cooking
Cook for 20 to 25 minutes over low heat with a tight lid. After turning off the heat, give it ten minutes to rest.
Step 6: Serve
