  1. 2 large red onions (thinly sliced)
  2. 2 tbsp mustard oil
  3. 1 tsp mustard seeds (coarsely crushed)
  4. 1 tsp fennel seeds (saunf)
  5. Β½ tsp fenugreek seeds (methi)
  6. 1 tsp red chilli powder (adjust to taste)
  7. Β½ tsp turmeric powder
  8. Salt to taste
  9. 2 tbsp lemon juice or vinegar
  10. 1 green chilli (finely chopped – optional)
  11. 6–8 curry leaves (optional, for aroma)

Street-Style Onion Pickle at Home: Method

Prep the onions: Slice onions thinly and pat them dry completely. Moisture reduces shelf life.

Heat the oil: Heat mustard oil until it reaches the smoking point. After turning off the heat, allow it to cool a little.
