Ingredients:

  1. 1 whole mutton leg (Raan) – 2 to 3 kg
  2. 1 cup yogurt (curd)
  3. 2 tbsp ginger-garlic paste
  4. 1 tbsp red chili powder
  5. 1 tsp turmeric powder
  6. 2 tsp coriander powder
  7. 1 tsp cumin powder
  8. 1 tsp garam masala
  9. 1 tsp black pepper powder
  10. 3 tbsp mustard oil (or cooking oil)
  11. Fresh coriander leaves – for garnish
  12. Salt – to taste
  13. Juice of 1 lemon

Instructions:

1. Prepare the Marinade:

In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, black pepper, garam masala, mustard oil, salt, and lemon juice. Mix well to form a smooth paste.

2. Marinate the Mutton Raan:

Make small incisions in the mutton leg to allow the marinade to penetrate deeply. Rub the marinade generously over the meat, ensuring it coats all sides. Cover and refrigerate for at least 6–8 hours, or overnight for best results.

3. Preheat the Oven:

Preheat your oven to 180°C (350°F).

4. Roast the Mutton:

Place the marinated mutton leg on a roasting tray. Cover it loosely with foil and roast for 1.5 to 2 hours. Baste occasionally with the remaining marinade to keep the meat juicy.

5. Finish with High Heat:

Remove the foil and roast for another 20–30 minutes to get a golden-brown crust. This step gives the mutton a smoky, flavorful exterior while keeping the inside tender and succulent.

6. Garnish and Serve:

Once cooked, let the mutton rest for 10 minutes before slicing. Garnish with freshly chopped coriander leaves and serve hot with steamed rice, naan, or traditional Pahadi chutney.

Tips for Perfect Pahadi Mutton Raan:

  1. Use fresh, high-quality mutton for the best taste.
  2. Marinating overnight enhances the flavors and tenderizes the meat.
  3. Slow roasting ensures the meat remains juicy and aromatic.
  4. Adjust chili and spices according to your heat preference.

Why Pahadi Mutton Raan is a Must-Try:

This dish isn’t just food; it’s an experience. The aromatic spices combined with tender meat deliver the rustic flavors of the Himalayan region. Ideal for family gatherings, festive occasions, or when you want to impress guests with authentic Indian cuisine.
