- 1 cup sugar (or as per taste)
- 2 cups finely grated coconut (fresh or dry)
- 1/2 cup milk
- 2-3 green cardamoms (ground)
- 1 tablespoon ghee
- 1/4 cup chopped almonds or cashews (for garnishing)
Method:
- First of all, place a wok or non-stick pan on the gas and heat it by adding ghee to it.
- Now add grated coconut to it and fry it on medium flame for 2-3 minutes.
- When the coconut turns light golden, add sugar and mix well.
- Now pour milk into the pan and cook it while stirring continuously.
- Keep the flame medium, so that the barfi does not burn.
- When the milk starts thickening and separating from the sides of the pan, add ground cardamom to it.
- When it thickens completely and starts sticking to the spoon, turn off the gas.
- Let the milk cool down a bit and then spread it on a greased plate or tray.
- Flatten it with the help of a knife or spatula and garnish it with chopped almonds or cashews.
- Keep the barfi in the fridge for 1-2 hours to set.
- When it freezes well, cut it into square or diamond shapes.
