Ingredients: Soft & Fluffy Poha Idli Recipe

  1. 2 cups poha (medium or thin)
  2. 1 cup semolina (fine)
  3. 1 cup curd (not sour)
  4. 1/2 cup water (as required)
  5. 1/4 tsp baking soda or 1/2 tsp Eno fruit salt
  6. Salt to taste
  7. A little oil (to grease the idli moulds)

Method:

  1. First of all, wash the poha thoroughly and soak it in water for 5-7 minutes. Squeeze out the excess water once the poha is soft.
  2. After this, put the soaked poha, semolina, and curd in a large bowl. Mix all these well.
  3. If you want, you can grind this mixture a little coarsely in the mixer so that the idlis become even smoother. Or, you can also make it without grinding.
  4. To get the consistency of idli batter, add water and salt as needed. The batter should not be excessively thick or thin. In order for the semolina to swell, keep it covered for 15 to 20 minutes.
  5. Add water to the idli maker and keep it hot right before preparing the idlis. Apply a thin layer of oil to the idli molds.
  6. Immediately pour this batter into the greased idli molds. Place it in the idli maker and steam it on a high flame for 10-12 minutes.
  7. When the idlis are cooked, turn off the flame and take out the idlis after 2 minutes. Serve hot poha idlis with coconut chutney, sambhar, or any chutney of your choice.
