Ingredients: Crispy Potato Kachori Recipe

For the dough

  1. Maida two cups
  2. Semolina one tablespoon
  3. Salt according to taste
  4. Oil/ghee for kneading
  5. Lukewarm water for kneading the dough

For potato stuffing

  1. Boiled and mashed potatoes, four to five
  2. Oil two tablespoons
  3. Cumin one teaspoon
  4. Coriander powder, one tablespoon
  5. Fennel half teaspoon
  6. Green chilli powder

Method:

  1. In a large pot, first sift the flour and semolina.
  2. Now add salt and oil/ghee for kneading and mix well.
  3. Mix it by kneading it with your hands until it starts to bind when you close your fist.
  4. Now knead soft dough with the help of lukewarm water.
  5. Now cover the dough and keep it aside for half an hour.
  6. After this, heat 2 tablespoons of oil in a pan.
  7. Add cumin seeds and fennel seeds and fry it.
  8. Now add green chilies and grated ginger and fry for a minute.
  9. After this, add all the powdered masala and fry it well on a low flame.
  10. Add the salt and mashed potatoes now, and stir thoroughly.
  11. Fry the stuffing for a while.
  12. Now switch off the gas and stir in the finely chopped coriander.
  13. Take out the stuffing on a plate and let it cool.
  14. After this, mash the kneaded dough lightly.
  15. Break small balls of dough.
  16. Flatten one ball slightly on the hand and fill the potato stuffing into it.
  17. Close it well and make a round ball.
  18. Now roll it slowly with light hands.
  19. After this, heat the oil in a pan. The oil should not be too hot.
  20. Now add 2-3 kachoris in it and fry till they turn golden.
  21. Your hot, crispy potato kachoris are ready.
  22. Serve them with curd, green chutney, or any other chutney you want.
