Ingredients: Dhaba-Style Mutton Curry

For marination

  1. 1/2 kg mutton
  2. 1/2 tsp turmeric
  3. 1 tsp red chilli powder
  4. 3 tsp curd
  5. Salt to taste for the curry
  6. 1/2 tsp red chilli powder
  7. 1/2 tsp turmeric
  8. 2 tsp oil
  9. 1 tsp cumin powder
  10.  1 tsp coriander powder
  11. 1 tsp garam masala
  12. 1 tsp cumin seeds
  13. 3 garlic cloves
  14. 2 red chillies, chopped
  15. 2 onions, chopped
  16. 2 tomatoes, chopped
  17. 1 tbsp ginger-garlic paste
  18. Salt to taste
  19. A handful of curry leaves
  20. Coriander leaves for garnishing

Method:

  1. First of all, clean and wash the mutton thoroughly. Then drain the water and marinate it with red chilli powder, turmeric, curd and salt.
  2. Keep aside for 20-30 minutes.
  3. The marinated mutton should then be placed in a pressure cooker..
  4. Then add oil, turmeric, red chilli powder, cumin powder, coriander powder, and garam masala and mix well.
  5. Next, add half a cup of water and boil until the mutton is tender. Set it away.
  6. After this, heat oil in a pan. Curry leaves, red chilies, cumin seeds, and garlic cloves should all be added and allowed to crackle.
  7. Then add onions and cook till they become golden brown.
  8. Mix thoroughly after adding the fresh coriander leaves and ginger-garlic paste.
  9. Add the chopped tomatoes now and simmer until they are tender.
  10. The cooked mutton and masala should then be added.
  11. Cover the pan and simmer over low heat for 10 to 15 minutes.
  12. Garnish with coriander leaves and serve hot!
