Ingredients: Dhaba-Style Mutton Curry
For marination
- 1/2 kg mutton
- 1/2 tsp turmeric
- 1 tsp red chilli powder
- 3 tsp curd
- Salt to taste for the curry
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric
- 2 tsp oil
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp cumin seeds
- 3 garlic cloves
- 2 red chillies, chopped
- 2 onions, chopped
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- Salt to taste
- A handful of curry leaves
- Coriander leaves for garnishing
Method:
- First of all, clean and wash the mutton thoroughly. Then drain the water and marinate it with red chilli powder, turmeric, curd and salt.
- Keep aside for 20-30 minutes.
- The marinated mutton should then be placed in a pressure cooker..
- Then add oil, turmeric, red chilli powder, cumin powder, coriander powder, and garam masala and mix well.
- Next, add half a cup of water and boil until the mutton is tender. Set it away.
- After this, heat oil in a pan. Curry leaves, red chilies, cumin seeds, and garlic cloves should all be added and allowed to crackle.
- Then add onions and cook till they become golden brown.
- Mix thoroughly after adding the fresh coriander leaves and ginger-garlic paste.
- Add the chopped tomatoes now and simmer until they are tender.
- The cooked mutton and masala should then be added.
- Cover the pan and simmer over low heat for 10 to 15 minutes.
- Garnish with coriander leaves and serve hot!
