Ingredients: Dhaba-Style Rajma Masala

  1. Rajma 1 cup soaked overnight.
  2. Water for boiling rajma.
  3. Salt to taste.
  4. Turmeric powder ½ tsp.
  5. Oil/Ghee 2 tbsp.
  6. Cumin- 1 tsp.
  7. Bay Leaf- 1.
  8. Onions- 2 finely chopped.
  9. Ginger-garlic paste 1 tsp.
  10. Tomatoes: 2 medium-sized.
  11. Finely chopped green chillies.
  12. Coriander powder 1 tsp.
  13. Red chili powder 1 tsp.
  14. Garam masala, half a teaspoon.
  15. Green cilantro to garnish.

Method :

  1. Soak the rajma in water overnight.
  2. The next morning, wash it, add 3-4 cups of water, salt, and turmeric, and boil in the pressure cooker until 4-5 whistles.
  3. Cook for 10 minutes on low heat.
  4. Now, heat oil or ghee in a pan.
  5. Add cumin and bay leaves to it.
  6. Add the onions and fry until golden.
  7. After that, add the ginger-garlic paste and green chilies.
  8. Fry it briefly for one to two minutes.
  9. After that, add the tomatoes and cook until they start to release the oil.
  10. Now add coriander powder, red chilli powder, and salt. Roast the spices well.
  11. Now add the boiled rajma to the tadka and mix well.
  12. Add a little water if needed and cook on low heat for 15-20 minutes to infuse the flavors well.
  13. Finally, add the garam masala and mix well.
  14. Now, garnish with green coriander.
  15. Serve rajma piping hot with rice, cumin rice, or soft phulkas.
