Ingredients: Enjoy Sweet Corn Soup
- Sweet corn 2 cups
- Water or vegetable stock 4 cups
- Ginger, one teaspoon finely chopped
- Garlic, one teaspoon, finely chopped
- Two onions, finely chopped
- Carrot, two tablespoons finely chopped
- French beans chopped
- Capsicum chopped
- Cornflour 2 tablespoons
- Salt to taste
- Black pepper powder
- Butter
- Green onion, finely chopped
Method:
- First of all, wash and boil the sweet corn.
- Now, grind half a cup of corn coarsely.
- Leave the rest of the corn whole.
- Now heat butter in a wok or pan.
- Now add finely chopped ginger and garlic and fry till the aroma starts coming.
- After this, fry the finely chopped onion till it turns light pink.
- Now add chopped carrots, capsicum, and French beans and cook.
- After this, add corn paste and the remaining sweet corn to the roasted vegetables.
- Now add 3 to 4 cups of water or vegetable stock and mix well.
- When it starts boiling, add salt and black pepper powder.
- After this, slowly add the cornflour solution and keep stirring continuously so that lumps do not form.
- Cook it till the soup thickens a little.
- Finally, add finely chopped green onions for garnishing.
- Take out the hot corn soup in a bowl and serve it hot.
