Ingredients: Enjoy Sweet Corn Soup

  1. Sweet corn 2 cups
  2. Water or vegetable stock 4 cups
  3. Ginger, one teaspoon finely chopped
  4. Garlic, one teaspoon, finely chopped
  5. Two onions, finely chopped
  6. Carrot, two tablespoons finely chopped
  7. French beans chopped
  8. Capsicum chopped
  9. Cornflour 2 tablespoons
  10. Salt to taste
  11. Black pepper powder
  12. Butter
  13. Green onion, finely chopped

Method:

  1. First of all, wash and boil the sweet corn.
  2. Now, grind half a cup of corn coarsely.
  3. Leave the rest of the corn whole.
  4. Now heat butter in a wok or pan.
  5. Now add finely chopped ginger and garlic and fry till the aroma starts coming.
  6. After this, fry the finely chopped onion till it turns light pink.
  7. Now add chopped carrots, capsicum, and French beans and cook.
  8. After this, add corn paste and the remaining sweet corn to the roasted vegetables.
  9. Now add 3 to 4 cups of water or vegetable stock and mix well.
  10. When it starts boiling, add salt and black pepper powder.
  11. After this, slowly add the cornflour solution and keep stirring continuously so that lumps do not form.
  12. Cook it till the soup thickens a little.
  13. Finally, add finely chopped green onions for garnishing.
  14. Take out the hot corn soup in a bowl and serve it hot.
