Ingredients:
Idlis – 10 to 12 (cold or leftover idlis will also work)
Mustard seeds – 1 tsp
Curry leaves – 8 to 10
Green chillies – 2 (chopped lengthwise)
Onion – 1 medium size (finely chopped)
Red chilli powder – 1/2 tsp
Turmeric – 1/4 tsp
Salt – as per taste
Oil – as per requirement
Lemon juice – 1 tsp (optional)
Coriander leaves – for garnishing
Method:
Cut each idli into 4 to 6 pieces so that small bite-sized pieces are made.
Now, heat oil in a skillet and deep fry the idli pieces until golden and crispy. Then lay them out on tissue paper.
After that, heat 1-2 teaspoons of oil in a pan. Add some mustard seeds to it. When the mustard seeds start to crackle, add the curry leaves and green chilies.
Now, add the chopped onion and sauté until it is light golden.
After that, add the turmeric, red chili powder, and salt. Fry the spices for 30 seconds.
Add the fried idli pieces and combine with the spices. Fry for 2-3 minutes to ensure that the flavor is evenly distributed.
After turning off the gas, sprinkle lemon juice and chopped coriander on top.
It can be paired with hot tea or coconut chutney.
