Homemade Paneer Bhurji: Method
- First of all, grate the paneer or mash it well with your hands. Make sure that the pieces of paneer are not too big.
- Now heat oil/ghee in a wok or pan. When the oil is hot, add cumin seeds to it. When the cumin seeds start crackling, add finely chopped onions and fry till golden.
- Now add ginger-garlic paste and green chillies and fry for 1-2 minutes till their raw smell goes away.
- Now add finely chopped tomatoes and fry till the tomatoes become soft and the oil starts separating.
- At the same time, add turmeric powder, red chili powder, coriander powder, and salt, and mix well. Fry the spices on low flame for 1-2 minutes so that their rawness goes away.
- If you are adding capsicum, then add finely chopped capsicum at this stage and cook for 2-3 minutes.
- When the spices are well roasted and start giving a good aroma, add mashed paneer to it.
- Mix the paneer well with the spices gently. Do not cook it too much, otherwise the paneer may become hard.
- Now add garam masala and kasuri methi by mashing them with your hands and mix well.
- After this, turn off the gas and finally garnish by adding finely chopped coriander leaves.
