Ingredients: Green Chilli & Green Tomato Vegetable
- Large green chilies – 10-12 (cut from the middle)
- Green tomatoes – 4-5 (medium size, cut into small pieces)
- Mustard seeds – 1/2 tsp
- Asafoetida – 1 pinch
- Turmeric powder – 1/2 tsp
- Coriander powder – 1 tsp
- Cumin powder – 1/2 tsp
- Red chili powder – 1/2 tsp (optional)
- Garam masala – 1/2 tsp
- Salt – as per taste
- Jaggery – 1 tsp
- Oil – 2 tbsp
- Chopped coriander leaves – for garnish

Method:
- First of all, cut the green chilies lengthwise from the middle. If you want less spiciness, then you can remove their seeds. Cut the green tomatoes into small pieces.
- Now add the tadka, for heat oil in a pan and add mustard seeds to it. When the mustard seeds start crackling, add asafoetida to it.
- Now fry green chilies. Now add chopped green chillies and fry on low flame for 2-3 minutes till they become slightly soft.
- Now add chopped green tomatoes and cook while stirring for 3-4 minutes.
- Now add turmeric, coriander powder, cumin powder, red chilli powder and salt. Mix well and cover and let it cook on low flame for 7-8 minutes so that tomatoes become soft.
- When tomatoes melt well and spices get mixed, then add jaggery and garam masala to them.
- Mix well and cook for 2-3 minutes more so that the taste of the vegetable gets balanced.
- Now turn off the gas and add freshly chopped coriander on top.
