- Potatoes (boiled and mashed) – 2 medium size
- Carrot (grated) – 1 medium size
- Peas (boiled) – 1/2 cup
- Onion (finely chopped) – 1
- Green chili (finely chopped) – 1-2
- Ginger-garlic paste – 1 tsp
- Coriander leaves (finely chopped) – 1/2 cup
- Kasuri methi – 1/2 tsp
- Garam masala – 1/2 tsp
- Red chilli powder – 1/4 tsp
- Coriander powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Salt – to taste
- Bread crumbs – 1 cup
- Oil – for frying

Method:
- Boil and mash the potatoes. Grate the carrots and boil the peas.
- Finely chop the onion and green chili.
- Finely chop the coriander leaves as well.
- In a large bowl, add mashed potatoes, grated carrots, boiled peas, finely chopped onions and green chilies, ginger-garlic paste, coriander leaves, kasuri methi, garam masala, red chili powder, coriander powder, turmeric powder, and salt and mix well.
- Make small balls from the mixture and coat these balls in bread crumbs.
- Heat oil in a pan and fry the cutlets till they turn golden brown.
- Serve hot vegetable cutlets with tomato sauce or green chutney.
