Ingredients:

  1. 1 cup Rava (semolina/sooji)
  2. 1 cup plain yogurt
  3. ½ tsp baking soda or Eno fruit salt
  4. 1 tsp ginger, finely grated
  5. 1-2 green chilies, finely chopped
  6. 1 tsp mustard seeds
  7. 1 tsp urad dal (split black gram)
  8. A few curry leaves
  9. 2 tbsp coriander leaves, chopped
  10. 2 tbsp oil or ghee
  11. Salt to taste
  12. Water as required

Step-by-Step Recipe:

Step 1: Roast the Rava

Dry roast 1 cup of rava in a pan on medium heat for 4–5 minutes until it gives a nice aroma. Allow it to cool slightly. Roasting helps prevent the idlis from becoming sticky and ensures fluffiness.

Step 2: Prepare the Batter

In a mixing bowl, combine the roasted rava with 1 cup of yogurt. Add ½ tsp salt, 1 tsp grated ginger, and chopped green chilies. Pour in some water gradually to form a smooth, thick batter. Let it rest for 10–15 minutes so that the rava absorbs the yogurt and softens.

Step 3: Tempering (Tadka)

Heat 2 tbsp oil in a small pan. Add mustard seeds, urad dal, and curry leaves. Sauté until the dal turns golden brown. Pour this tempering into the batter along with chopped coriander leaves. Mix gently.

Step 4: Add Leavening Agent

Just before steaming, add ½ tsp baking soda or Eno fruit salt to the batter and mix gently. This will give your Rava Idli a soft and spongy texture.

Step 5: Steam the Idlis

Grease the idli molds with oil. Pour the batter into the molds and steam in a preheated steamer for 10–12 minutes on medium heat. Insert a toothpick to check; if it comes out clean, the idlis are ready.

Step 6: Serve Hot

Remove the Rava Idlis from the molds and serve immediately with coconut chutney, tomato chutney, or sambar. For added flavor, drizzle some ghee over the hot idlis.

  3. Steam on medium heat for even cooking.

Rava Idli is not only a staple South Indian breakfast but also a crowd-pleaser for brunch, parties, or even evening snacks. Its light texture and subtle flavors make it ideal for all age groups.

Bring the authentic taste of South India to your home with this easy Rava Idli recipe, and enjoy soft, fluffy, and aromatic idlis with your favorite chutneys and sambar.
