  2. 2 tbsp mustard oil

  7. ½ tsp turmeric powder
  8. Salt to taste
  9. 2 tbsp lemon juice or vinegar
  10. 1 green chilli (finely chopped – optional)
  11. 6–8 curry leaves (optional, for aroma)

Prep the onions: Slice onions thinly and pat them dry completely. Moisture reduces shelf life.
