For the Syrup:

  1. In a pan, combine sugar and water. Heat on medium flame.
  2. Add crushed cardamoms and bring the mixture to a gentle boil.
  3. Let it simmer for 5–7 minutes until slightly thickened (do not overcook).
  4. Switch off the flame, stir in rose water, and set aside.

For the Gulab Jamun:

  1. In a mixing bowl, mash the mawa until smooth and lump-free.
  2. If the mawa feels too soft, mix in a little flour to bind it (avoid excess flour to keep them soft).
  3. Add baking soda, then gradually pour in milk and knead into a soft, non-sticky dough.
  4. Apply a little ghee to your palms and shape the dough into smooth, crack-free small balls.
  5. Heat ghee or oil on medium-low flame — it should be hot but not smoking.
  6. Gently slide in the balls and fry on low heat, stirring often for even browning.
  7. Once golden, remove and drain on paper towels.
  8. While still warm, transfer them into the hot syrup and let them soak for 2–3 hours.
  9. Your soft, juicy gulab jamuns are ready to serve — perfect with a sprinkle of love and a side of celebration!
