Baingan ka Bharta recipe for kids: Ingredients

 

  1. 2 large Baingan
  2. 1 large onion (finely chopped)
  3. 2 tomatoes (finely chopped)
  4. 4-5 garlic buds (minced)
  5. 2 green chilies (finely chopped)
  6. 1 teaspoon cumin
  7. 1/2 teaspoon turmeric powder
  8. 1/2 teaspoon red chili powder
  9. 1 teaspoon coriander powder
  10. 1/2 teaspoon garam masala
  11. Salt to taste
  12. 2 tablespoons mustard oil
  13. Green coriander (for garnishing)

Method :

  1. First, put the grill on the gas, place the Baingan on it, and roast it thoroughly.
  2. Sear the Baingan thoroughly on all sides, so that its peel burns and the pulp inside softens.
  3. Now let the Baingan cool, then peel it and remove the pulp into a bowl.
  4. Heat mustard oil in a pan and fry cumin seeds in it.
  5. Add finely chopped onions and fry until lightly golden.
  6. After the onions are sautéed, add the garlic and green chilies and sauté for a few seconds.
  7. Now add chopped tomatoes and cook until soft.
  8. Once the tomatoes are cooked, add the turmeric, red chilies, coriander powder, and salt and mix well.
  9. Now add the roasted Baingan pulp to it and mix well with the spices.
  10. Cook this mixture on low heat for 5-7 minutes, so that all the flavors are well combined.
  11. Lastly, add the garam masala, mix lightly, and turn off the gas.
  12. Remove the prepared filling to a bowl and sprinkle with green coriander.
  13. Serve the Baingan ka Bharta hot with roti, paratha, or dal-rice.
