Paneer 65 Recipe: A Crispy Paneer Starter That’s Impossible to Resist
Some dishes make an impression even before the first bite. Paneer 65 is one of them.
With its vibrant reddish coating, crispy edges, aromatic curry leaves, and irresistible combination of spices, this South Indian-inspired snack can easily become the star of your party menu.
The recipe adapts the seasoning and frying techniques associated with Chicken 65, a dish closely linked to Chennai’s culinary culture, for a vegetarian audience.
Instead of chicken, fresh paneer cubes are coated in a spiced batter and fried until crisp.
The finished dish delivers a delightful contrast between a crunchy exterior and a soft, creamy centre.
It’s ideal for family gatherings, festive celebrations,s or evenings when you’re craving something spicy and delicious.

What Makes Paneer 65 Different From Regular Paneer Fry?
The distinctive character of Paneer 65 comes from its seasoning.
Ginger, garlic, red chilli powder, curry leaves, es and a tangy ingredient such as lemon juice create its bold flavour.
Cornflour and rice flour help produce the crispy exterior.
Unlike heavily sauced paneer dishes, Paneer 65 is generally served dry or lightly tossed with aromatics.
This allows the crisp coating to remain the highlight.

How to Make Crispy Paneer 65
Step 1: Prepare the marinade
In a mixing bowl, combine yogurt, ginger-garlic paste, chilli powders, turmeric, garam masala, black pepper, lemon juice, and salt.
Mix thoroughly.
Step 2: Coat the paneer
Add paneer cubes and gently coat them in the marinade.
Allow them to rest for approximately 10–15 minutes.
Avoid excessive mixing, which can break the paneer.
Step 3: Add the crispy coating
Sprinkle cornflour and rice flour over the marinated paneer.
Mix gently until the cubes are coated.
If needed, add a few drops of water. The coating should cling to the paneer rather than form a runny batter.
Step 4: Fry until crisp
Heat oil to approximately 175°C.
Fry the paneer in small batches until the coating becomes crisp and lightly golden, usually 2–3 minutes.
Remove with a slotted spoon and place on a wire rack or absorbent paper.
Step 5: Prepare the tempering
Heat one tablespoon of oil in a separate pan.
Add the chopped garlic, green chilies, and curry leaves now
Sauté briefly until aromatic and the curry leaves become crisp.
Stand back while adding curry leaves because their moisture can cause hot oil to splutter.
Step 6: Toss and serve
Add the fried paneer to the tempering and toss quickly.
Serve immediately with lemon wedges.
Five Tips for Perfect Paneer 65
First, use fresh paneer. Soft paneer produces the best contrast with the crispy coating.
Second, keep the batter relatively dry. Excess moisture can make the coating heavy.
Third, maintain a consistent frying temperature. Oil that is too cool causes the coating to absorb excess oil, while overly hot oil may burn the spices.
Fourth, avoid overcrowding the pan.
Finally, add the tempering immediately before serving to preserve the crisp texture.
Can You Make Paneer 65 in an Air Fryer?
Yes.
Preheat the air fryer to 190°C.
Arrange the coated paneer cubes in a single layer and lightly brush or spray them with oil.
Air-fry for approximately 8–12 minutes, turning halfway through, until the coating is crisp and the paneer is heated through.
The result may be slightly less crunchy than deep-fried Paneer 65, but it is a convenient alternative.
What to Serve With Paneer 65
Paneer 65 pairs beautifully with mint chutney, coconut chutney, or a tangy yogurt dip.
It can also accompany vegetable fried rice, noodles,s or a South Indian-inspired meal.
For parties, serve it in small bowls with toothpicks and lemon wedges.
