Kashmiri Rajma Curry Recipe: A Rich, Comforting Taste of Kashmir in Every Spoonful
There are some dishes that impress you with elaborate presentation, and then there are dishes that win you over simply by filling the kitchen with an irresistible aroma. Kashmiri Rajma Curry belongs firmly to the second category.
Soft, creamy kidney beans simmered with warming spices create a curry that is deeply satisfying without needing an unnecessarily complicated list of ingredients. Pair it with a steaming plate of rice, and you have the kind of meal that makes you want to forget everything else on the dining table for a while.
If you love rajma but have mostly eaten the familiar Punjabi-style preparation, this Kashmiri Rajma recipe is worth discovering.

What Makes Kashmiri Rajma Different?
Kashmiri rajma is generally smaller than the wide, common varieties of kidney beans and is valued for its creamy texture after cooking. Once properly soaked and pressure-cooked, the beans become beautifully tender and absorb the flavours of the curry.
What really gives a Kashmiri-style preparation its personality, however, is the seasoning.
Instead of depending only on a heavy onion-tomato masala, Kashmiri preparations can draw flavour from ingredients such as asafoetida, dry ginger powder, fennel powder, Kashmiri red chilli and aromatic whole spices.
The result is a rajma curry that feels warming, aromatic and wonderfully comforting.
Kashmiri Rajma Curry Recipe
Preparation time: 10 minutes, plus overnight soaking
Cooking time: 40β50 minutes
Servings: 4
Cuisine: Kashmiri/Indian
Course: Main Course
Ingredients
For cooking the rajma:
- 1Β½ cups Kashmiri rajma
- 4β5 cups water
- 1 bay leaf
- 1 black cardamom
- 1 small cinnamon stick
- Salt to taste
For the curry:
- 2β3 tablespoons mustard oil or ghee
- 1 teaspoon cumin seeds
- ΒΌ teaspoon asafoetida
- 1 teaspoon grated fresh ginger
- 1 cup tomato puree
- Β½ teaspoon turmeric powder
- 1β1Β½ teaspoons Kashmiri red chilli powder
- 1 teaspoon fennel powder
- Β½β1 teaspoon dry ginger powder
- 1 teaspoon coriander powder
- Β½ teaspoon garam masala
- Salt to taste
- Β½ cup whisked yogurt, optional
- Fresh coriander for garnish, optional
Step 1: Soak the Rajma Overnight
Wash the Kashmiri rajma thoroughly and soak it in plenty of water for at least 8 hours or overnight.
Don’t rush this step.
Proper soaking helps the beans cook more evenly and gives you the soft, creamy texture that makes a good bowl of rajma so satisfying.
Drain the soaking water before cooking.
Step 2: Cook Until Completely Tender
Pour the rajma into a pressure cooker after it has been soaked. Add fresh water, bay leaf, black cardamom, cinnamon, and salt.
Pressure-cook until the beans are completely tender.
Cooking time can vary depending on the variety and age of the beans, so don’t rely exclusively on the number of whistles. Take one bean and press it gently. It should mash easily rather than feel firm or chalky inside.
Keep the cooked rajma along with some of its cooking liquid. That liquid will help give the curry body later.
Step 3: Build the Kashmiri-Style Masala
Heat mustard oil in a heavy-bottomed pan. If using mustard oil, heat it properly and then reduce the temperature.
Add cumin seeds and allow them to crackle.
Add asafoetida and grated ginger and stir briefly.
Now add the tomato puree and cook over medium heat until the raw tomato flavour disappears and the mixture begins to look glossy.
Lower the heat and add turmeric, Kashmiri red chilli powder, fennel powder, dry ginger powder, coriander powder, and salt.
Cook the spices gently rather than burning them.
If the masala begins sticking to the pan, add a splash of the reserved rajma cooking liquid.
Step 4: Add Yogurt for Extra Richness
If you enjoy a slightly richer and tangier Kashmiri rajma curry, lower the heat and gradually stir in well-whisked yogurt.
Keep stirring while adding it so that the yogurt blends smoothly into the masala.
This step is optional. The curry can also be prepared without yogurt for a simpler version.
Step 5: Add Rajma and Let Time Do the Work
Now add the cooked rajma along with enough of its cooking liquid to create a medium-thick gravy.
Here’s a simple trick that makes a noticeable difference: mash a small spoonful of rajma against the side of the pan and mix it back into the curry.
It naturally thickens the gravy without adding cream or flour.
Bring everything to a gentle boil, then reduce the heat and simmer for around 15β20 minutes.
This final simmer is important. Rajma tastes much better when the beans have enough time to absorb the spices rather than simply being mixed into a finished gravy.
Add garam masala at the end and check for salt.
Authentic Kashmiri Rajma Curry Recipe: What to Serve With Kashmiri Rajma
For me, the obvious answer is rice.
A bowl of piping-hot Kashmiri Rajma Chawal is difficult to beat. The creamy beans, aromatic gravy and simple steamed rice complement one another beautifully.
You can also serve Kashmiri rajma with:
- Steamed basmati rice
- Jeera rice
- Plain roti
- Paratha
- Lightly spiced pulao
- Plain yogurt and sliced salad on the side
Keep the accompaniments relatively simple and allow the rajma to remain the star of the meal.
Tips for Perfect Kashmiri Rajma
Use Kashmiri rajma if you can find it. Its smaller beans and creamy texture work particularly well in this curry.
Don’t undercook the beans. Perfect rajma should be tender enough to mash easily.
Give the curry time to simmer after combining the beans and masala. This is where separate ingredients begin tasting like one cohesive dish.
And don’t mistake Kashmiri chilli powder for extreme heat. One of its great culinary strengths is the beautiful red colour and flavour it can contribute without necessarily making the dish overwhelmingly spicy.
