Ingredients:
- Lauki – 1 cup (grated)
- Curd – 1.5 cups (cooled and whipped)
- Roasted cumin powder – ½ tsp
- Black pepper powder – ¼ tsp
- Black salt – according to taste
- Salt – according to taste
- Green coriander – for garnishing
- A little asafoetida and mustard tadka (optional, to enhance the taste)
Method: Lauki Raita Recipe
- To make Lauki Raita, first wash and peel it and then grate it.
- Now add some water and boil it lightly for about 2-3 minutes.
- After this, drain the water and let the gourd cool down.
- Then whisk the curd well so that there are no lumps in it.
- Add roasted cumin, black pepper, black salt, and white salt according to taste.
- Add the cooled boiled gourd to the curd and then mix well.
- Sprinkle green coriander on top, and if you want, you can also add a little asafoetida-mustard tadka.
- Keep the raita in the fridge for at least 15-20 minutes and then serve.
- It goes perfectly with roti, paratha, pulao, khichdi, or any food.
