Ingredients: Mix Vegetable Soup Recipe
- Onion – 1 (finely chopped)
- Carrot – 1 (cut into small pieces)
- Beans – 5-6 (finely chopped)
- Capsicum – ½ (finely chopped)
- Peas – ¼ cup
- Cabbage – ¼ cup (chopped)
- Sweet corn – ¼ cup
- Ginger-garlic paste – 1 tsp
- Cornflour – 1 tsp (to thicken)
- Black pepper powder – ½ tsp
- Salt to taste
- Soya sauce – 1 tsp (optional)
- Vinegar – ½ tsp (for flavor)
- Water or vegetable stock – 3 cups
- Oil or butter – 1 tsp

Method:
- Chop all the vegetables into small pieces. This will make the soup cook quickly and well.
- Add oil/butter in a pan or wok and heat it on a medium flame. Add ginger-garlic paste and saute till it turns light golden.
- Now add onion, carrot, beans, capsicum, peas, and cabbage and saute for 2-3 minutes. When the vegetables become slightly soft, add black pepper powder and salt.
- After this, add 3 cups of water or vegetable stock and let the vegetables cook on a low flame for 5-7 minutes.
- Dissolve 1 tsp cornflour in 2 tbsp water and add it slowly to the soup. Mix it well and boil for 2-3 minutes, till the soup thickens a little.
- Now add soy sauce and vinegar and mix well. Let it boil for one last time and then turn off the gas.
- Serve the prepared mixed vegetable soup hot and top it with some chopped coriander or green onions.
