Ingredients: Mix Vegetable Soup Recipe

  1. Onion – 1 (finely chopped)
  2. Carrot – 1 (cut into small pieces)
  3. Beans – 5-6 (finely chopped)
  4. Capsicum – ½ (finely chopped)
  5. Peas – ¼ cup
  6. Cabbage – ¼ cup (chopped)
  7. Sweet corn – ¼ cup
  8. Ginger-garlic paste – 1 tsp
  9. Cornflour – 1 tsp (to thicken)
  10. Black pepper powder – ½ tsp
  11. Salt to taste
  12. Soya sauce – 1 tsp (optional)
  13. Vinegar – ½ tsp (for flavor)
  14. Water or vegetable stock – 3 cups
  15. Oil or butter – 1 tsp

Method:

  1. Chop all the vegetables into small pieces. This will make the soup cook quickly and well.
  2. Add oil/butter in a pan or wok and heat it on a medium flame. Add ginger-garlic paste and saute till it turns light golden.
  3. Now add onion, carrot, beans, capsicum, peas, and cabbage and saute for 2-3 minutes. When the vegetables become slightly soft, add black pepper powder and salt.
  4. After this, add 3 cups of water or vegetable stock and let the vegetables cook on a low flame for 5-7 minutes.
  5. Dissolve 1 tsp cornflour in 2 tbsp water and add it slowly to the soup. Mix it well and boil for 2-3 minutes, till the soup thickens a little.
  6. Now add soy sauce and vinegar and mix well. Let it boil for one last time and then turn off the gas.
  7. Serve the prepared mixed vegetable soup hot and top it with some chopped coriander or green onions.
