Ingredients:

  1. 4-5 papads (any type, like moong dal or urad dal papad)
  2. 2 tomatoes (finely chopped)
  3. 1 onion (finely chopped)
  4. 2 green chilies (finely chopped)
  5. 1 inch ginger (finely chopped)
  6. 2-3 garlic cloves (finely chopped)
  7. 1/2 cup curd
  8. 1/2 tsp turmeric powder
  9. 1 tsp coriander powder
  10. 1/2 tsp red chili powder
  11. 1/2 tsp garam masala
  12. 1/2 tsp cumin seeds
  13. 1/2 tsp mustard seeds
  14. 1/2 tsp asafoetida
  15. 2 tbsp oil
  16. Salt to taste
  17. Fresh coriander leaves (for garnishing)

Method: Papad Jhol Sabzi Recipe

  1. First of all, break the papads into small pieces. There is no need to fry them, as they will become soft while cooking in the vegetable.
  2. Heat oil in a pan. When hot, add cumin seeds and mustard seeds to it. When they start crackling, add asafoetida.
  3. Add finely chopped onion to the pan and fry it till it turns golden. Then add ginger, garlic, and green chilies and fry well.
  4. Now add finely chopped tomatoes and cook till they become soft. Once the tomatoes are fully cooked, add turmeric powder, coriander powder, red chili powder, and salt and mix well.
  5. Now add curd and mix well. Take care that the curd does not split, so add it slowly and keep stirring continuously.
  6. Now add pappad pieces and mix well. Let the papad soften and mix with the vegetable.
  7. Finally, add garam masala and mix well.
  8. Let the vegetable cook on low flame for 5-7 minutes so that the papad pieces soften and the flavor of the vegetable blends well.
  9. Take the vegetables off the gas and garnish with fresh coriander leaves.
  10. Serve hot papad ki jholadar sabzi with rice or roti.
