For Stuffing:
300g paneer cubes, 1 capsicum (sliced), 1 onion (sliced), green chillies, 2 tbsp tomato sauce, 1 tbsp red chilli sauce, 1 tsp soya sauce, ½ tsp black pepper, 2 tablespoons oil, 1 teaspoon ginger-garlic paste, and salt to taste.
For Roti: 2 cups all-purpose flour, 1 tbsp oil, salt, water.
For Topping: Green chutney (mint-coriander), mayonnaise/curd, chaat masala.
Method:
- Prepare the dough: Mix flour, oil, and salt. Knead a soft dough and rest for 15–20 minutes.
- Make the stuffing: Heat oil, add ginger-garlic paste and green chillies. Sauté onions and capsicum on a high flame. Add paneer cubes, sauces, black pepper, and salt. Cook for 2–3 minutes.
- Make rotis: Roll out thin rotis, cook lightly on both sides with oil.
- Assemble the Frankie: Spread green chutney and mayonnaise on the roti, add paneer stuffing, sprinkle chaat masala, roll it tight, and wrap in foil.
