Aloo Uttapam Recipe: Ingredients

  1. Boiled potatoes: 2 (mashed)
  2. Uttapam/Dosa batter: 2 cups (market or homemade)
  3. Onion: 1 small (finely chopped)
  4. Green chili: 1 (finely chopped, according to taste)
  5. Ginger: ½ inch (grated or finely chopped)
  6. Curry leaves: 7-8
  7. Mustard seeds: ½ tsp
  8. Cumin seeds: ½ tsp
  9. Turmeric powder: ¼ tsp
  10. Red chili powder: ¼ tsp (optional)
  11. Coriander leaves: 2 tbsp

Method :

  1. Firstly, heat 1 tsp of oil in a pan. Let the cumin and mustard seeds crackle after adding them.
  2. Then add curry leaves, finely chopped onion, green chili, and ginger, and fry till the onion turns light pink.
  3. Now add mashed boiled potatoes, turmeric powder, red chili powder (if using), and salt, and mix well. Fry for 2-3 minutes so that the spices mix well with the potatoes.
  4. Finally, add finely chopped coriander leaves and turn off the gas. Your aloo masala is ready.
  5. Whisk the uttapam batter well. If the batter is too thick, adjust its consistency by adding some water (it is slightly thicker than dosa batter). Add salt to taste (if the batter is not already salted).
  6. Heat a non-stick pan. Spread some oil on it and then on medium flame, pour a ladle of batter and do not spread it too much, just make a thick round shape with a light hand. It is not as thin as dosa, remember.
  7. Immediately after spreading the batter, spread a thin layer of prepared aloo masala on the uttapam with a light hand. If you want, you can add some more finely chopped onion or coriander leaves on top.
  8. Pour some oil or ghee on the edges. Cook the uttapam on low flame till it turns golden on one side.
  9. When the edges start to turn light brown and the color of the uttapam starts changing from the top, flip it.
  10. After this, fry the other side till it becomes golden and crispy.
