Ingredients: Beetroot Coconut Chutney Recipe

  1. 3 tablespoons oil
  2. 1 tablespoon urad dal
  3. 1 tablespoon gram dal
  4. Half a tablespoon of cumin seeds
  5. 3 to 4 whole red chillies
  6. 1 inch piece of ginger
  7. Pieces of beetroot
  8. Salt to taste

Method:

  1. Heat 3 tablespoons oil in a large pan.
  2. Add 1 tablespoon urad dal, 1 tablespoon chana dal, half a tablespoon of cumin seeds, and 3 to 4 whole red chilies.
  3. Add 1 inch of ginger, a beetroot piece, and salt as per taste.
  4. Stir it well cover it and cook for 10 minutes.
  5. After cooking, turn off the gas and let the mixture cool down.
  6. When it cools down, put it in a blender.
  7. Now add coconut, tamarind, salt, and water to the blender blend it finely, and transfer the chutney to a bowl.
  8. After this, add tempering to the chutney.
  9. Heat oil in a small pan.
  10. Add tempering of mustard seeds, curry leaves, whole red chilies, and urad dal to it.
  11. Spread beetroot over the coconut chutney and mix well.
  12. Tasty coconut chutney with a twist is ready.
