Ingredients:

Boiled potatoes – 4 medium-sized

Tomatoes – 2 crushed

Green chilli – 1 finely chopped

Ginger – 1 small piece grated

Cumin seeds – 1/2 teaspoon

Turmeric – 1/2 teaspoon

Coriander powder – 1 teaspoon

Red chilli powder – as per taste

Rock salt/plain salt – as per taste

Green coriander – for garnishing

Ghee or oil – 1 to 2 teaspoons

Water – as per need

Method:

First of all break the potatoes into thick pieces by hand. Do not chop them too finely, so that the batter gets a good thickness.

Heat some ghee or oil in a pan. Add cumin seeds to it, then add chopped green chilli and ginger and fry lightly.

Now add the ground tomato and add turmeric, coriander powder, red chilli, and salt to it. Fry it till the oil starts appearing separately.

Now add the broken potatoes to the roasted masala and stir well for 2-3 minutes so that the masala mixes well with the potatoes.

Now add water as per the requirement, as thin or thick as you want the batter. Mix well and cover and let it cook on low flame for 7-8 minutes.

When the batter thickens slightly, add green coriander on top and turn off the gas after boiling once.

If you want to make the batter more sweet and sour, then you can add a little dry mango powder or a pinch of sugar, the taste will double.
