Ingredients:
- 1 cup gram flour
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp fenugreek seeds
- 1/2 tsp asafoetida
- 10-12 curry leaves
- 2-3 dried red chillies
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tbsp tamarind paste
- 1/2 tsp garam masala
- Salt to taste
- 4 cups water
- 1/2 cup ladyfinger
- 1/2 cup chopped potatoes
- 1/2 cup chopped carrots
- 1/2 cup chopped cauliflower
- Green coriander
How to make Sindhi Kadhi?
Heat oil in a pan and temper it by adding mustard seeds, cumin seeds, fenugreek seeds, and asafoetida. Now add curry leaves and dried red chilies and fry it. Now after this add gram flour and fry it on low flame till it becomes light brown. When the gram flour is roasted well, add turmeric, red chili powder, and salt to it. Now add water to it slowly and keep stirring continuously so that lumps do not form. When the mixture starts thickening, add tamarind paste to it. Now add potatoes, carrots, ladyfingers, and cauliflower, and cook for 10-15 minutes. When the vegetables are cooked well, add garam masala and green coriander and turn off the gas. Now serve Sindhi Kadhi with hot rice and enjoy its amazing taste.
