Ingredients:
- 1 kg gourd, peeled and grated
- 1-liter milk
- 2 cups sugar
- 1/2 cup ghee
- 1/2 cup mawa (khoya)
- 1/4 cup cashews, finely chopped
- 1/4 cup almonds, finely chopped
- 1/4 cup pistachios, finely chopped
- 1/4 teaspoon cardamom powder

Method:
- Heat ghee in a heavy bottom pan.
- Add grated gourd and fry on a medium flame for 10-15 minutes or until the water of the gourd dries up.
- Add milk, mix well, and let it boil.
- Reduce the heat and cook the milk till it thickens.
- Add sugar mix well and cook till the sugar dissolves.
- Add mawa and mix well and cook for 5-7 minutes or until the mixture thickens.
- Add cashews, almonds, pistachios, and cardamom powder and mix well.
- Pour the mixture into a greased plate and spread evenly.
- Let it cool and then cut into the shape of your choice.
- Serve the lauki barfi or store it in an airtight container.
