Kadai Chicken at Home: Ingredients
For the Kadai Masala:
- 1 tbsp coriander seeds
- 1 tsp cumin seeds
- 4-5 dried red chilies
For the Curry:
- 500g chicken (with bone or boneless)
- 2 tbsp oil or ghee
- 1 onion (finely chopped)
- 1 capsicum (diced)
- 2 tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
Salt to taste
- 1/2 tsp garam masala
- Fresh coriander leaves for garnish
Instructions:
1. Dry roast & grind Kadai masala:
- Dried red chilies, cumin seeds, and coriander seeds should all be dry-roasted until fragrant.
- Let them cool and grind coarsely. Set aside.
2. Cooking the chicken:
- Heat oil/ghee in a kadai or pan.
- Add chopped onions and sauté until golden brown.
- Cook the ginger-garlic paste until the raw scent goes away.
- Add chicken and sauté for 5-6 minutes.
- Add turmeric, red chili powder, and salt. Mix well.
- Cook until the oil separates after adding the tomato puree.

3. Add spice & veggies:
- Add the ground kadai masala and mix.
- Add a splash of water if needed.
- Add diced capsicum and cook for another 5 minutes.
4. Finishing touch:
- Add garam masala, stir thoroughly, and boil for two minutes.
- Serve hot with rice, roti, or naan and garnish with fresh coriander.
