Kadai Chicken at Home: Ingredients

For the Kadai Masala:

  1. 1 tbsp coriander seeds
  2. 1 tsp cumin seeds
  3. 4-5 dried red chilies

For the Curry:

  1. 500g chicken (with bone or boneless)
  2. 2 tbsp oil or ghee
  3. 1 onion (finely chopped)
  4. 1 capsicum (diced)
  5. 2 tomatoes (pureed)
  6. 1 tbsp ginger-garlic paste
  7. 1 tsp red chili powder
  8. 1/2 tsp turmeric powder

Salt to taste

  1. 1/2 tsp garam masala
  2. Fresh coriander leaves for garnish

Instructions:

1. Dry roast & grind Kadai masala:

  1. Dried red chilies, cumin seeds, and coriander seeds should all be dry-roasted until fragrant.
  2. Let them cool and grind coarsely. Set aside.

2. Cooking the chicken:

  1. Heat oil/ghee in a kadai or pan.
  2. Add chopped onions and sauté until golden brown.
  3. Cook the ginger-garlic paste until the raw scent goes away.
  4. Add chicken and sauté for 5-6 minutes.
  5. Add turmeric, red chili powder, and salt. Mix well.
  6. Cook until the oil separates after adding the tomato puree.

3. Add spice & veggies:

  1. Add the ground kadai masala and mix.
  2. Add a splash of water if needed.
  3. Add diced capsicum and cook for another 5 minutes.

4. Finishing touch:

  1. Add garam masala, stir thoroughly, and boil for two minutes.
  2. Serve hot with rice, roti, or naan and garnish with fresh coriander.
