Make Restaurant-Style Nawabi Paneer: Ingredients

  1. 200 grams paneer (cut into cubes)
  2. 1/2 cup curd (fresh and full cream)
  3. 1/2 cup cashews (soaked)
  4. 2 tablespoons malai or fresh cream
  5. 1/2 cup milk
  6. 2 green chillies (finely chopped)
  7. 1 small piece of ginger (grated)
  8. 1/2 teaspoon fennel powder
  9. 1/2 teaspoon garam masala
  10. 1/2 teaspoon coriander powder
  11. 1/2 teaspoon white pepper powder
  12. 1/2 teaspoon sugar (to balance the taste)
  13. 1/2 teaspoon cardamom powder
  14. 2 tablespoons desi ghee
  15. Chopped coriander and almonds-pistachios for garnish
  16. Salt to taste

Method:

  1. First of all, grind the soaked cashews with milk in a mixer and make a smooth paste.
  2. Heat desi ghee in a pan add ginger and green chillies and fry lightly.
  3. Now add cashew paste and cook on low flame for 2-3 minutes till the rawness goes away.
  4. Now add whipped curd and keep stirring continuously so that the curd does not curdle.
  5. When the gravy starts thickening, add cream, white pepper powder, fennel powder, cardamom powder, garam masala, and salt.
  6. Now add paneer pieces and cook on low flame for 3-4 minutes.
  7. Add some sugar so that all the flavours get balanced and let the gravy cook for 2 more minutes.
