Method:
- First of all, take all-purpose flour in a large vessel. Add ghee or oil to it and add celery and salt and mix well with both hands, so that the flour gets the right amount of kneading.
- Now add normal water little by little and knead a hard dough. Cover the dough and keep it for 20-25 minutes, until it sets.
- Now heat oil in a pan and add cumin seeds and fennel seeds. When the aroma starts coming, add ginger-green chili paste and fry lightly. Now add coarsely ground green peas and cook on a medium flame for 5-7 minutes.
- Add coriander powder, red chili powder, garam masala, dry mango powder, and salt as per taste. Mix the spices well and fry the peas until their rawness goes away. After turning off the gas, let the mixture cool.
- Now make small balls of kneaded dough and roll them lengthwise with a rolling pin. After rolling, cut it from the middle and divide it into two equal parts.
- After this, fold one part into the shape of a cone and stick the edges by applying water.
- Now fill the prepared pea stuffing in it and close the upper part properly, so that the samosa does not open while frying.
- Heat oil in a pan. When the oil becomes slightly hot (oil should not be too hot), add samosas and fry on medium flame.
- The samosas should be fried until crispy and golden brown. Now take out the fried samosas on a tissue paper so that the extra oil drains out.
- Now serve the hot pea samosas with coriander-mint green chutney and sweet tamarind chutney. If you want to make it more healthy, then you can also make it crispy in the air fryer.
