How to make Medu Vada: Ingredients

  1. 1 cup semolina (rava)
  2. ½ cup curd
  3. ¼ cup onion (finely chopped)
  4. 1-2 green chilies (finely chopped)
  5. ½ tsp ginger (grated)
  6. 1 tsp curry leaves (chopped)
  7. 1 tsp coriander leaves (finely chopped)
  8. ½ tsp black pepper (coarsely ground)
  9. ½ tsp salt
  10. ¼ tsp baking soda (for fluffy vada texture)
  11. Water as per requirement
  12. Oil (for frying)

Method:

  1. To make this dish, first of all, put semolina and curd in a large bowl and mix well.
  2. Prepare a thick batter by adding water little by little and keep it covered for 15-20 minutes, so that the semolina swells.
  3. Now add onion, green chilies, ginger, curry leaves, coriander leaves, black pepper and salt and mix well.
  4. Finally, add baking soda and mix gently so that the vadas become light and fluffy.
  5. After doing this, apply some water to the hands and make round balls from the batter.
  6. Now make a small hole in the middle with the help of fingers, so that the vada is made in the right texture.
  7. Prepare all the vadas in the same way and then heat oil in a pan.
  8. When the oil becomes medium-hot, add the vadas one by one.
  9. Fry them on medium flame till they become golden brown and crispy.
  10. When the vadas are well cooked, take them out on tissue paper so that the extra oil drains out.
  11. Serve hot semolina medu vada with coconut chutney, tomato chutney, or sambar.
  12. If you want to try something new, you can also eat it with mint curd dip.
