How to make Medu Vada: Ingredients
- 1 cup semolina (rava)
- ½ cup curd
- ¼ cup onion (finely chopped)
- 1-2 green chilies (finely chopped)
- ½ tsp ginger (grated)
- 1 tsp curry leaves (chopped)
- 1 tsp coriander leaves (finely chopped)
- ½ tsp black pepper (coarsely ground)
- ½ tsp salt
- ¼ tsp baking soda (for fluffy vada texture)
- Water as per requirement
- Oil (for frying)
Method:
- To make this dish, first of all, put semolina and curd in a large bowl and mix well.
- Prepare a thick batter by adding water little by little and keep it covered for 15-20 minutes, so that the semolina swells.
- Now add onion, green chilies, ginger, curry leaves, coriander leaves, black pepper and salt and mix well.
- Finally, add baking soda and mix gently so that the vadas become light and fluffy.
- After doing this, apply some water to the hands and make round balls from the batter.
- Now make a small hole in the middle with the help of fingers, so that the vada is made in the right texture.
- Prepare all the vadas in the same way and then heat oil in a pan.
- When the oil becomes medium-hot, add the vadas one by one.
- Fry them on medium flame till they become golden brown and crispy.
- When the vadas are well cooked, take them out on tissue paper so that the extra oil drains out.
- Serve hot semolina medu vada with coconut chutney, tomato chutney, or sambar.
- If you want to try something new, you can also eat it with mint curd dip.
