Method:
- First of all, cut the green chilies lengthwise from the middle. If you want less spiciness, then you can remove their seeds. Cut the green tomatoes into small pieces.
- Now add the tadka: heat oil in a pan and add mustard seeds to it. When the mustard seeds start crackling, add asafoetida to it.
- Now fry green chilies. Now add chopped green chillies and fry on a low flame for 2-3 minutes till they become slightly soft.
- Now add chopped green tomatoes and cook while stirring for 3-4 minutes.
- Now add turmeric, coriander powder, cumin powder, red chilli powder, and salt. Mix well, cover, and let it cook on a low flame for 7-8 minutes so that the tomatoes become soft.
- When tomatoes melt well and spices get mixed, then add jaggery and garam masala to them.
- Mix well and cook for 2-3 minutes more so that the taste of the vegetable gets balanced.
- Now turn off the gas and add freshly chopped coriander on top.
