🥘 Ingredients: Raj Kachori Recipe

For Kachori Dough:

  1. 2 cups flour
  2. 2 tbsp semolina
  3. 2 tbsp oil (for kneading)
  4. Salt to taste
  5. Water for kneading
  6. Oil for frying

For Stuffing:

  1. ½ cup urad dal (soaked and ground)
  2. 1 small piece of ginger (grated)
  3. 1 green chilli
  4. 1 tsp fennel powder
  5. ½ tsp coriander powder
  6. ½ tsp red chilli powder
  7. Salt to taste
  8. 1 tbsp oil

For Chaat Toppings:

  1. 1 cup curd (whipped)
  2. 4 tbsp green chutney
  3. 4 tbsp sweet tamarind chutney
  4. 1 tsp chaat masala
  5. 1 tsp roasted cumin powder
  6. ½ tsp red chilli powder
  7. 1 onion (finely chopped)
  8. 1 tomato (finely chopped)
  9. 1 green chilli
  10. ½ apple (chopped)
  11. Sev
  12. Fresh coriander leaves

👩‍🍳 Method

  1. Prepare the dough: Mix flour, semolina, salt, and oil. Knead into a stiff dough using water.
  2. Make stuffing: Heat oil, add ginger, green chilli, dal, and spices. Cook until dry.
  3. Shape & fry kachoris: Make dough balls, fill with stuffing, seal well, and fry on a low flame until golden and crispy.
  4. Assemble the chaat: Lightly press two kachoris on a plate, pour curd, chutneys, and sprinkle chopped onions, tomatoes, and green chilli.
  5. Add spices, sev, apple pieces, and fresh coriander. Serve immediately!
