Ingredients: Dry-Fruit Sago Kheer Recipe
- 1 cup sago (sabudana)
- 1 liter of full-cream milk
- 1/2 cup sugar (adjust to taste)
- 10-12 almonds, finely chopped
- 10-12 cashews, finely chopped
- 10-12 raisins
- 1 teaspoon cardamom powder
- A few strands of saffron (optional, for aroma and color)
Method:
Step 1: Prepare the sago
Wash the sago pearls thoroughly 2-3 times to remove excess starch. Soak them in water for 3-4 hours until they soften. This ensures they cook evenly and achieve a perfect, melt-in-the-mouth texture.
Step 2: Boil the milk
In a deep, heavy-bottomed pot, pour the milk and bring it to a gentle boil over low heat. To keep the milk from sinking to the bottom, stir from time to time.
Step 3: Cook the sago
Drain the soaked sago and add it to the boiling milk. Stir continuously while cooking over low heat. Cook until the sago becomes translucent and the milk thickens into a creamy consistency.
Step 4: Add sweetness and dry fruits
Once the kheer thickens, add sugar, chopped almonds, cashews, and raisins. Sprinkle cardamom powder for that fragrant aroma. If using, add saffron strands to enhance the color and flavor. Mix everything well and cook for another 2-3 minutes.
Step 5: Serve
Turn off the heat and allow the kheer to cool slightly. Dry-fruit sago kheer can be enjoyed warm or chilled, making it versatile for any time of the day during your fast.
