  1. 1 cup cauliflower, chopped into small pieces
  2. 1 cup carrots, chopped into small pieces
  3. 1 cup potatoes, chopped into small pieces
  4. 1/2 cup green peas
  5. 1/2 cup beans, chopped into small pieces
  6. 1/2 cup capsicum, chopped into small pieces
  7. 1 onion, finely chopped
  8. 2 tomatoes, finely chopped
  9. 1 inch ginger, grated
  10. 2 green chillies, finely chopped
  11. 1/2 tsp turmeric powder
  12. 1 tsp red chilli powder
  13. 1 tsp coriander powder
  14. 1/2 tsp garam masala
  15. Salt to taste
  16. Oil as required
  17. Coriander leaves, finely chopped (for garnish)

  1. Firstly, wash and chop all the vegetables.
  2. Heat oil in a pan and fry the onions till they turn golden.
  3. Add ginger and green chillies and fry for a minute.
  4. Add tomatoes and cook till they become soft.
  5. Add turmeric powder, red chilli powder, coriander powder and salt and mix well.
  6. Add all the vegetables and mix well.
  7. Add some water, cover and cook on low flame for 10-15 minutes, or until the vegetables are cooked.
  8. Add garam masala and mix well.
  9. Garnish with coriander leaves.
  10. Serve the mixed veg sabzi hot with roti, rice or paratha.
