Ingredients to make Dhokla

  1. 1 cup gram flour (main ingredient of basic dhokla)
  2. ½ cup curd (for sourness, but fresh can also work)
  3. ½ cup water
  4. 1 tsp turmeric powder
  5. 1 tsp salt (to taste)1 tsp ginger-green chilli paste
  6. 1 tsp sugar (to balance the taste)
  7. 1 tsp lemon juice
  8. 1 tbsp oil
  9. 1 tsp Eno or ½ tsp baking soda (to make it fluffy)

How to make soft and spongy dhokla

Prepare the batter

  1. Add gram flour, curd, and water in a large bowl and mix well so that there are no lumps.
  2. Add turmeric, salt, sugar, ginger-green chilli paste and lemon juice and mix well.
  3. Now cover the batter and keep it for 15-20 minutes so that the flavours mix well.

Prepare the steamer

  1. Add 2-3 cups of water in a deep vessel and keep it to boil.
  2. Now grease a plate or cake tin with oil so that the dhokla does not stick.
  3. Add Eno to the batter and steam
  4. Now add 1 tsp of Eno or baking soda to the batter and mix gently. (Note: Do not mix the batter too much, else the gas will escape and the dhokla will not rise properly.)
  5. Immediately pour the prepared batter into the greased plate and place it in the steamer.
  6. Steam for 15-20 minutes on medium flame.
  7. Once the dhokla is cooked, check by inserting a toothpick – if the toothpick comes out clean, the dhokla is ready.
  8. Turn off the gas and let the dhokla cool for 5 minutes.

Tadka Recipe

Ingredients for Tadka

  1. 1 tbsp oil
  2. 1 tsp mustard seeds
  3. 8-10 curry leaves
  4. 2 green chillies (chopped)
  5. 1 tsp sesame seeds – for extra crunch
  6. ½ cup water + 1 tsp sugar + ½ tsp lemon juice (to make Tadka water)

Method of Tadka

  1. Heat oil in a small pan and temper it by adding mustard seeds, curry leaves, sesame seeds and green chillies.
  2. When the mustard seeds start crackling, add water, sugar, and lemon juice and boil for 30 seconds.
  3. Now pour this tempering well on the prepared dhokla, so that it gets absorbed from all sides and becomes super soft.

How to serve

  1. Cut the dhokla into small pieces and garnish with coriander leaves and grated coconut.
  2. Serve it with sweet tamarind chutney and green chutney.
  3. If you have tea or masala buttermilk along with it, it’s enjoyment will double.
