Raw Mango Jam Recipe: Ingredients

  1. 4-5 medium-sized raw mangoes (hard and green)
  2. 2 cups sugar (equal to the weight of the mango)
  3. 1 teaspoon cardamom powder
  4. 1/2 teaspoon saffron (optional)
  5. 1 teaspoon lemon juice
  6. 4 cups water

Method:

  1. Wash the raw mangoes thoroughly and dry them.
  2. Now peel them and cut them lengthwise from the middle and separate the seeds and wipe the mango pieces with a clean cloth and dry them.
  3. After this, heat water in a large vessel. When the water starts boiling, add the mango pieces.
  4. Boil the mangoes for 5-7 minutes so that they become a little soft, but do not make it too soft.
  5. After this, take out the mangoes and dip them in cold water, and then dry them.
  6. Now prepare the syrup by adding 2 cups of water and sugar in a heavy bottom pan. Cook the syrup till it thickens (one string syrup should be formed).
  7. Now add mango pieces to the syrup and cook on a medium flame. Add cardamom powder and saffron to it.
  8. Cook it till the syrup thickens and the mangoes start looking slightly transparent.
  9. Now add lemon juice and mix well.
  10. Turn off the gas and let the jam cool down.
  11. When it cools completely, fill it into an airtight glass jar and store it.
