Ingredients: Crispy soya cutlet recipe
- Boiled potatoes: 2 medium-sized, mashed
- Soya chunks: 1 cup (approximately 50 grams), soak in hot water for 15-20 minutes, and squeeze
- Finely chopped onions: 1/2 cup
- Finely chopped green chilies: 1-2 (according to taste)
- Ginger-garlic paste: 1 tsp
- Coriander leaves: 2 tbsp, finely chopped
- Bread crumbs: 1/2 cup (for coating) + 2 tbsp (for mixing)
- Cornflour or refined flour: 2 tbsp (for binding)
- Red chili powder: 1/2 tsp
- Coriander powder: 1 tsp
- Turmeric powder: 1/4 tsp
- Garam masala: 1/2 tsp
- Dry mango powder: 1/2 tsp
- Salt: to taste
- Oil: for frying

Method:
- Firstly, soak the soya chunks in hot water. Soak for 15-20 minutes.
- When they become soft, remove them from the water and squeeze well so that all the water is removed.
- Now grind them coarsely in a mixer or mash them well with your hands.
- Take mashed soya chunks and boiled mashed potatoes in a large bowl.
- Add finely chopped onion, green chilies, ginger-garlic paste, coriander leaves, 2 tbsp bread crumbs, cornflour or all-purpose flour, red chili powder, coriander powder, turmeric powder, garam masala, dry mango powder, and salt.
- Mix all the ingredients well to form a binding mixture.
- Apply some oil on your hands. Take a small portion of the mixture and give it the shape of your choice. Then prepare all the cutlets in the same way.
- Spread the remaining bread crumbs on a plate. Roll the prepared cutlets well in bread crumbs so that they get coated from all sides. This will make the cutlets crispy on the outside.
- Heat oil in a pan for frying. Oil should be medium hot.
- When the oil is hot, reduce the flame and add cutlets one by one. Add only as many cutlets at a time as you can fry comfortably.
- Fry the cutlets on a low to medium flame till they turn golden brown and crispy. Frying on a low flame helps in cooking the cutlets from the inside.
- Flip them on both sides and cook them well. When the cutlets turn golden and crispy, take them out on kitchen paper to drain out the extra oil.
