Ingredients:
- Basmati rice – 2 cups
- Ghee or oil – 3-4 tablespoons
- Finely chopped onion – 1
- Finely chopped vegetables (carrots, beans, cauliflower, peas) – 1 cup
- Chopped dry fruits (cashews, almonds, raisins) – 1/2 cup
- Milk – 1 cup
- Saffron – a pinch
- Cardamom – 2-3
- Cinnamon – 1 small piece
- Cloves – 2-3
- Bay leaves – 1-2
- Salt – according to taste
- Water – 4 cups

Method: Shahi Pulao Recipe
- First of all, wash the Basmati rice thoroughly and soak it in water for 20-30 minutes.
- This will separate the rice grains and enhance the taste of the pulao.
- Soak the saffron in milk in a small bowl.
- This will bring the color and aroma of saffron to the milk, which will make the pulao even more special.
- Heat ghee or oil in a pressure cooker or heavy bottom vessel.
- When it is hot, add cardamom, cinnamon, cloves, and bay leaves and fry lightly.
- Now add finely chopped onion and fry till it becomes light golden.
- Then add chopped vegetables and fry for 2-3 minutes.
- After vegetables, add chopped dry fruits and fry lightly.
- This will enhance the taste of the pulao even more.
- Now add soaked rice and fry lightly. Then add 4 cups of water and add salt. Mix well and close the lid.
- Let the rice cook on medium flame.
- When the rice is cooked and the water dries up, add saffron milk and mix lightly.
- Close the lid and cook on low flame for 5 minutes.
- Finally, garnish with green coriander.
